The bouquet is seductive and complex, rich in scents of autolysis and roasted stone fruits, butter brioche and nut, preserved lemon and mineral-laden. Fantastic on the palate with full-bodied soft unfurling mousse then releases to reveal flavours of citrus and stone fruits, some baked apple, lemon peel and baked goods. Harmonious, complex, seductive and delicious.
